5 screenshot images in docs were updated the reflect the current UI.

Why?

Outdated docs/screenshots.

Limitations and Notes

• I tried to change all personal data / test data to something representable. Let me know if you wish to have something else there (I mostly tweaked it with the browser console)
• I fixed some Markdown linting errors in the Readme along the way.

Before we only focused on the light mode screenshots but I'd love to see some dark mode too in the future. Not necessary for now though as having more screenshots might flood a bit.

@davinotdavid I was thinking about the dark mode too and thought I'd keep it light for now. But we could just lay the dark mode versions into the docs folder too and link to it from the Readme
