Nights look like vanilla. Check the mod is enabled, and that you are outside under open sky. Moonlit only changes sky light, never block light, so torches and lanterns work as they always did.
Shaders make no difference. Shader packs replace Minecraft's lighting and sky rendering, so the visual changes get bypassed. Mob spawning still follows the moon, since that runs on the server.
A new moon is not dark enough. Check the Brightness slider in Video Settings. It is applied after everything Moonlit does, and on Bright it lifts pure black up to visible grey no matter what the mod sets.
Settings will not change on a server. The server controls anything affecting what players can see, so nobody can brighten their way out of a dark night. Mod Menu marks those options as managed by the server.
Daylight sensors changed strength. Inverted ones now read the moon phase instead of a fixed night value.
