P1 Badge Document both public duration histograms

Once these statics are exercised they expose quickwit_indexing_operation_duration_seconds and quickwit_actor_duration_seconds on the public /metrics endpoint, but docs/reference/metrics.md:28-41 neither has an actor section nor lists the new indexing histogram. Operators who use that catalog cannot discover the labels or the important overlap/cancellation semantics, so add both entries (and those semantics) to the metrics reference.
