chore: replace MinIO with RustFS for local S3 - #46

The minio/minio image can no longer be pulled from Docker Hub.
RustFS enforces the bucket CORS rule that pyro-api sets at bucket creation, and its default origin (localhost:5173) is not the frontend.

Hi @MateoLostanlen happy tothis PR after Minio has removed open s3 services. Happy to use RustFS which is fast and works as expected !

The S3 console is now athttp://localhost:9001/rustfs/console/.
