fix: prevent error in sendEmail due to empty from recepient

Ensures that if a from address is not provided in the message, the adapter falls back to the default configured address. This was currently causing the following error when used with SendGrid:

Fixed by passing the from option after the ...message gets spread, and adds regression tests.
