Replaced Unity 6.5 with LTS 6.6.

For local tooling, 6.6 now has unity-of-bugs-local/Assets as a real directory holding per-folder symlinks. Unity Hub rejects a symlinked Assets folder..

unity-pipeline.ps1 now works with Pipeline 0.9:

• commands use the form;
• the project is matched by its full path, so worktrees work;
• results returned as JSON strings are parsed.

While at it some changes to CI:

• Unity install: Windows and macOS install Unity through a new scripts/setup-unity.ps1, which uses the Unity CLI pinned by checksum. The external setup-unity action is gone. Linux stays on the GameCI Docker images.
• Docker shared memory: containers get --shm-size=2g, which Unity 6.6 needs.
• Retry: if Unity exits with code 137, it's retried once. Unity 6.6 sometimes kills itself at startup?
• Redroid: linux-modules-extra is installed only when the kernel doesn't already ship binder_linux. Kernel 7.0 runners have it in the base modules package.
• Android SDK build: pinned to JDK 17. On ubuntu-26.04, JDK 25's javac emits a warning that -Werror turns into a build failure.
