chore: upgrade to Vite+ 1.1.0

Upgrade vite-plus from 0.1.16 to 1.1.0 and use the bundled vitest@5.0.3. Pin the toolchain catalog entries and update the pnpm overrides. Add @vitest/coverage-v8 so the coverage script has its required provider. The tests use the new defaults without compatibility settings.

The package declares ESM and CommonJS entry points, but vp pack did not emit those files. The pack configuration now emits both formats at the declared paths, with separate type declarations. It bundles @solid-primitives/rootless because that dependency provides no CommonJS entry.

The declarations resolve Solid types through ESM imports so CommonJS consumers can use them. This declaration syntax requires TypeScript 5.3 or later.
