read_yaml_model reads a missing enzymes key, a content-less enzymes: !!omap and enzymes: !!omap [] as an empty enzyme map.

A reaction of the
ec-rxnssection with an empty enzyme map is written without anenzymeskey, as RAVEN'swriteYAMLmodeldoes. The reader treats a missing key as an empty map and still reads the content-lessenzymes: !!omapandenzymes: !!omap []of earlier files. Tests cover the saved text, a round trip, and all three forms on loading.
