I can't find anything about changing food values in documentation, is it already possible?

For example changing the amount of hunger and saturation that nuclearcraft milk chocolate gives from 4 and 5, to 6 and 8.

groovyscript has a lot of functionality that is and will remain undocumented due to being second-class compat - that is, it uses the relevant class files, not something created by groovyscript. in this case, its vanilla minecraft. doing item('minecraft:bread').getItem().healAmount = 5 will change the amount of hunger bread gives the player (and saturationModifier = 5f will change saturation). if you want to learn more about this, you need to decompile vanilla, which is typically done by setting up a dev environment.
