Subject: [PATCH] build: bump go.work go directive to 1.27.3 (CVE-2026-111943)

go.mod now requires go 1.27.3, but go.work still listed 1.27.2, so
goreleaser's 'go mod tidy' hook failed: 'module . requires go >= 1.27.3,
but go.work lists go 1.27.2'. Align go.work with go.mod.
